Citrus Shrimp: A Refreshing Summer Delight

Imagine a balmy summer afternoon, the sky painted in hues of pink and orange as the sun sets, and the gentle rustling of leaves whispers the melody of the season. On such a day, you desire a meal that is light, healthful, and brimming with zesty flavors. Enter our Citrus Shrimp – a delightful recipe that perfectly complements the mood of the season.

This dish, with its bright and sunny disposition, can either be prepared on a stovetop or skewered and grilled on a BBQ, making it a versatile addition to your summer menu. The succulent shrimp bathed in a citrus marinade is not just a pleasure to the palate, but also a feast for the eyes.

Ingredients:

  • 2 oranges, zested and juiced
  • 3 limes, zested and juiced
  • 2 tablespoons of olive oil
  • ½ teaspoon of salt, or to taste
  • 3 cloves of garlic
  • 1 ½ pounds of large shrimp, peeled and deveined

Instructions:

  1. Start by blending the orange juice and zest, lime juice and zest, olive oil, garlic, and salt in a blender or food processor. Take care with the salt as shrimp tends to absorb it quite easily. Blend until you get a smooth mixture.
  2. Pour this citrus marinade over the shrimp placed in a bowl. Let the shrimp marinate for about 20 minutes at room temperature, allowing it to soak up the vibrant flavors.
  3. Heat a non-stick skillet over medium-high heat. Fry the shrimp for about 3 minutes per side, in batches if needed, until they turn opaque. You can spoon a little of the marinade over the shrimp while they cook for an extra burst of flavor.
  4. Serve it by itself or on a bed of fresh arugula salad with the extra marinade poured over.

As you bite into the citrus shrimp, you can taste the zesty undertones of the oranges and limes, the smoothness of olive oil, and the subtle kick of garlic. This recipe is more than just a delightful culinary experience; it’s the embodiment of a perfect summer afternoon, right on your plate.
